How ancient and medieval warfare works; or, Your Shield Is Important & Not Just There To Look Pretty.

I was watching The Hollow Crown and its Henry IV Part 1. And I got really excited for a minute because Hal and Hotspur initially came at each other and were fighting with their shields. And then the acknowledge each other in the text, ooh, dramatic, and they fucking both toss their shields away to ~fight more intensely~. Goddammit.

I know nothing about fighting, medieval or otherwise, and it seems like someone coming at you with a sword is definitely not the time to throw your shield unless it maybe has a razor-sharp edge and you're hoping to decapitate your enemy with it or something.

I'm going to guess this comes down mostly to fictional honour and drama tropes. As in, it's 'cowardly' to hide behind a defense rather than straight attacking, particularly in a climactic duel or what have you, and also it's 'cheating' and/or 'dishonourable' to, say, bash somebody in the face with your shield rather than duelling nobly with swords.

Shields aren't cowardly, they're fucking good sense and everyone involved would have been trained from a young age to fight with them!

I can handwave shield use in the swords are small enough (although in a combat situation, a buckler's a good idea), but if they're whacking each other with big broadswords in a war... at least establish they lost their shield before engaging the current opponent, not deliberately abandoned it. Such a pet peeve.

Well, yes. I mean, if it was me in a real fight, I'd be perfectly happy to hide behind my nice lump of wood/metal and also to hit people with whatever I had to hand until they stopped trying to kill me. But, you know. Fiction and tropes.
