I was a junior producer on a cooking competition-type show, and from what I gleaned, the inside is supposed to be... gooey but not *quite* undercooked?

Yep, you want gooey but not raw. Nice a creamy and soft.

Yeah, they felt creamy to me but it was definitely the same 'creamy' texture all the way through.

Hm. Next time I make them I should pull them out like 2 minutes earlier. I kept them in for the lowest recommended time on the recipe.

Did you use an oven thermometer? Could be your oven runs hot or something.
