I have realized I generally tend to pick out one character that I just want to have all of the sex and happy endings and I'm fairly flexible on who's providing that for them.

This happens to me all the time. I have at least one character in every fandom I multi-ship. And my current two OTPs both share one character. Thankfully the person I pair them with first is long gone before the second pairing happens, so it is pretty easy to make both work.
