It's literally one of two things:

1) The author is writing it with assumptions of what EVERYONE would probably like and it's just not lining up or

2) They are writing what THEY personally like or how they;'d react, which, of course, isn't gonna line up at all in how anyone else would.

This is why most NPc or OC/Reader fics just fall short. Because we're not a hive mind.
