I have seen young men in art with many eyes. Sort of an angelic theme.

Oooh, yes! There's also the detail in Ovid that peacock's tails, with their 'eyes', were Hera's way of honouring Argus after his death. So you could have peacock elements in there, an iridescent, many-eyed, feathered monster girl, or go the many-eyed giantess route either.
