Eh. Unless you have the time to cultivate your own sourdough starter, it'd probably come out more like a tortilla cracker than anything else. Even flatbreads generally require more than flour, water and salt, they include some sort of fat: oil, butter, lard, etc.

If this is something you've always wanted to try, then don't half ass it. Look up a recipe that sounds good to you, gather the ingredients and try it. Bread is easier than most people think, but it's still a chemical process. You can't just throw any old thing together and have it come out well. This is probably the easiest recipe. It requires flour, salt, water and yeast.
