Sam and Steve, I absolutely love seeing them pal-up and save the day together but I don't ship it on any level.

Will and Beverly were my absolute favourites and I was so sad (even though narrative wise it couldn't have worked another way, she'd probably grab Will and run like a normal person)

I think they couldn't have done much more with her character at that point, yeah. It was a nice and very fitting wrap-up to her story, even though it was pretty heartbreaking.

I would have loved her to get a 'happy' ending like Alana and Margot, disappearing off into the sunset somehow, but that just wouldn't work for her character. There's no way Katz would ever rest so long as she thought there was even the slimmest chance that the Chesapeake Ripper was still at large, and there's no way she'd sit back and let Will get so tangled up with Hannibal.

I wish the show had kept them the way they were in seasons 1-6 -- this intense, profound bond between them that couldn't really fall into any simple category, with forehead kisses and hospital bedside sobbing and "you're my one in 5 million" -- and kept the very last scene from the (original) finale, with them mirroring episode 1 except curled up together on the motel bed. THE END.

That way if you wanted to imagine them staying platonic but super-intense friends, or becoming sexual/romantic partners, you could, or whatever else you wanted.
