Cucumbers are amazing, as are tomatoes, jicama, cabbage, spinach, brussels sprouts, snap peas, broccoli, all kinds of choy, gai lan, corn, japanese sweet potatoes, yellow beets, young carrots, kabocha, enoki mushrooms, japanese eggplant, chinese cabbage varieties, lo bok, taro potatoes, birdseye chiles, summer squash...

I fucking love vegetables

YES YES all of this! You stole my heart lol aw I haven't had a taro potato in forever.

I'm definitely much more of a veggie person than a fruit person.

I consider fruit to be more of a dessert thing or a supplement to lunch instead of a regular thing to eat. Lots of sugar in fruit.

I do love it, but I don't eat vast quantities. Veggies make up like 70% of my food budget lol

I've really learned to love brussels sprouts. Turns out that just boiling them with no seasoning whatsoever like my mom used to do makes them mushy and skunky! They're so freaking good if you toss them with oil/lemon/salt/thyme/a little paprika and then roast them until they're all brown and crispy on the outside.

There's a restaurant in my city that makes the best Brussels sprouts, they roast them and then blast them under the broiler until the outer leaves are crispy and serve them with a spicy aioli. They're to DIE for.

Mmmmm, that sounds wonderful. I haven't tried throwing them in the broiler after they're done, I'll do that next time!

Roasting them is great. Honestly, roasting almost any vegetable is great. Another thing I like to do is to get a pan, fry some bacon, add a diced shallot, then toss the brussels sprouts in halved. And then fry em hard, add some stock or water, let it all evaporate away, and then add just a splash of balsamic vinegar before serving.

Cauliflower, maybe? Zucchini? Potatoes are very versatile but I wouldn't necessarily call them a favorite.

EDAMAME, I could destroy an entire bag.

I'm also a sucker for green beans if they're warm and mixed with lemon juice, salt, and a bit of olive oil. I've also recently fell in love with green pepper! I used to hate it, but now I don't know how to make eggs or pasta without it <3

Baby carrots are fun to snack on too.

Spinach, steamed Broccoli and Green beans, grilled/roasted Asparagus, Corn on the cob, Carrots cooked in a roast, good old fashioned Salad, Cucumbers, Mushrooms and Bell peppers.
