Too hard to choose, I love so many. :) Japanese, Chinese, Indian, Thai, Korean... I haven't had as much experience with South/Central American cuisines, but I've enjoyed what little I've tried.

Japanese: sushi, ramen
Chinese: dim sum, but anything really
Indian: saag paneer, curries, pakora, all the breads!
Thai: pad thai, anything with Thai basil in it, also curries
Korean: bibimbap, bulgogi, bbq, the savory pancakes
