Guatemalan (I've learned a ton of Guatemalan recipes from a friend who is half-Guatemalan, and I even say it's pretty superior to Mexican even. Guatemalan enchiladas are to DIE FOR.)
Japanese (I've been learning to make homemade Japanese dishes as well, using authentic ingredients. I'm actually quite fond of unadon, hiyashi chuka, various varieties of sushi, okonomiyaki, and takoyaki :3)
Korean (especially Korean BBQ.)
