Give me all the feta...also kasseri and halloumi.

I love manchego and aged gouda and humboldt fog too. And maytag blue cheese and their cheddar, and gorgonzola and pecorino and parmegiano reggiano...but if I've got spaghetti and melted butter, give me a giant pile of grated kefalotiri on top.

The only cheese I've ever hated is some awful artisanal thing from an outfit called Cowgirl Creamery that, honest to God, tasted the way cat pee smells.
