I think the biggest issue with OUAT is the writing. They have good ideas, but they never manage to pull them off. Case in point: Regina's redemption. I love a good redemption story. And for a while I bought into her being redeemed. But the problem is the writers couldn't pull it off. They just had her switch sides without apologizing or making much effort to change. And Rumple is even worse because he just switches back and forth depending on the writer's moods or the "needs" of a particular storyline.

Yeah, this. A lot of OUATs ideas are great, but their execution is in the toilet, especially in later seasons. I still think Season 1 was their single best season and it all went downhill from there, and a part of me thinks that's entirely because of the closed structure of S1. S1 had a very defined storyline, the characters had very specific arcs and motivations inside that storyline, and it all built up to a definitive climax. Once Storybrooke was opened up to various worlds at that season finale, though, the writers just lost the plot. Literally. They're just not good at character consistency and without such a clearly defined situation as they had in S1, they've just been flip-flopping all over the place ever since.

I was going to chime in with "OUAT's writers can't write redemption," except if I'm honest they just can't write. Best way to enjoy the show is to pick a corner of fandom and ignore canon whenever you couldn't stomach it anymore--I lasted through most of season 3, but it started being a slog even earlier.

Yep, yep. I can't stand Rumple anymore but what's worse are his fans defending his behavior and saying that he's any kind of victim because Belle has the audacity to stop trusting him after he's lied to her a million times. At least with Regina they decided she was going to be a good guy and have had her stay on that path by not doing evil things even though her redemption has been handled badly.
