I think there's a fundamental difference between "coding" and between Jewish creators creating a superhero that's specifically exemplifying certain aspects of Judaism.
Superman's not meant to be an allegory for Jewish people, or "Jewish" himself, but he does have roots in Jewish ideas.

Though, I do think that some of the reactions you see here against the "coding" idea are to the more drastic examples of it (like adults being "child coded") rather than the concept itself.
