What do you mean, and yet? Augustine wasn't a monk when he came up with the 'Lord, make me chaste, but not yet,' prayer. That whole passage is a slightly caustic reflection on his behaviour as a confused and horny young man, who wasn't sure exactly what he believed anyway. Augustine was very well aware of the pleasures of the world and the flesh before he adopted an ascetic lifestyle as a mature man. He doesn't fit the trope OP is complaining about in pretty much any way.
