In all fairness, Victor didn't "go gray", his hair is just silver - scenes from when he was in the juniors also show him with the same hair color. Unless he went gray at age 14 or something.

Well I was more responding to OP thinking it automatically makes someone look old but yeah, that's just artistic choice and I've seen other animes do similar before where a character is silver or white haired regardless of age.
