Calories, mostly.

Example of today's food:
Breakfast: 2 pieces toast with peanut butter, and a coffee (black).
Lunch: Salad of spinach and blueberries and crumbled feta, with hummus and veggies on the side.
Dinner: Rice, roasted veggies, and a vegetarian burger.
Snack: Sliced apple with peanut butter and light caramel dip

I'm struggling to eat dinner and have no interest in my snack, which is honestly usually my motivational 'reward' for making it through the day being healthy. It's what I look forward to most nights that it's on my planned menu.

That sounds pretty healthy to me, tbh, and you can always wait to eat dinner until you are hungry for it.

Well, I'm going to bed soon so it's now or never! lol But yeah, I thought it seemed okay?

I think I'm making too big a deal out of it due to my choppy past with food and hunger.

Seconding the "that sounds fine" sentiment. You're getting plenty of protein as well as fruits and veggies.
