I don't know if this counts...Monica and Chandler on Friends. I read that the writers actually planned for the London hookup to just be a hookup, but fans reacted well to it so they went with it, which is funny because their relationship is probably the least screwed up one on the show.

Peggy and Stan on Mad Men

Monica and Chandler is such a weirdly good relationship. It's absolutely one of the best things on the show

I loooved Peggy and Stan. I felt kinda dirty for liking Stan when he first showed up because he was such a tool, but the actor was inexplicably hot to me (not my type but somehow he worked) and I shipped it. By the end, he was literally the only character I could stand at that point, so...no regrets, Peggy could get it.

NAYRT - I feel like Stan grew up a lot, so by the time he got with Peggy, it had also been years since he was a frat boy. You're right that he was one of the more lovable characters by the end of the show. (And when I think about it, he and Peggy had such an obvious setup from almost the beginning, but he was such a tool I never thought anything of it. In fact, before season five I even told my friend I hoped he'd be put on a bus!)

That's probably my favorite thing about Monica and Chandler- that it happened by accident, just about.

Originally, the writers were considering making Monica/Joey a thing. (Which comes back into to play in season 7's "The One With the Truth About London.")

But yeah, Monica/Chandler really does seem like a natural progression when you look at the way they interact even in the earliest episodes.

Even their characters parallel quite nicely outside of their one-on-one interactions. In early seasons they both compare themselves to recently deceased elders (Monica's grandmother and... I forget his name, but the neighbor who always complained they were waking up his birds - "I could have birds"), and they have similar insecurities they have to work through. I cared way more about their stories than Rachel and Ross's. (Although Rachel and Ross were okay on their own.)
