I think HBO has said if they do make a spin off it will be about past events.

Though, right now they are trying to get Westworld to be there next big thing for 5ish seasons.

Yeah agreed. I think if we *must* continue with the universe then the past is probably the place to go since there's a lot of history in ASOIAF we know very little about or nothing about.

But I don't know how it'd work since even GRRM seems over it, if it wasn't making him gobs of money I kind of wonder if he'd even bother finishing the series (if he ever does lol.)

This exactly. Not only do I actually like the Dunk and Egg stories better than the current narrative, I think TV audiences would be fascinated by a flashback with forshadowing of how events got to their current place, including the Blackfyre Rebellion.
