They do that too. If you were married (in a proper Christian marriage, i.e. a male/female marriage where neither of you had previously been divorced or had children out of wedlock) you continued on as usual. The Handmaids are women who were in "improper" marriages or not married who were fertile. Offred's husband had previously been married and divorced, so her marriage was invalid and she became a Handmaid.
