I never thought she was pretending she didn't intend for Hermione to be white when she said that. She was saying she just happened not to specify it so it's free to read however you want no matter what her intent was.

Oh but yes, not acknowledging one line that mentions Hermione's white face is definitely proof that she was just pretending she never specified it. It's not like authors honestly forget any individual lines they write over the course of seven books.
