It's the same kind of phrase as "green with envy". No one's actually green. "White-faced" in a context where someone is scared shitless (as in that part of the book) just means paler than their usual skin tone, not Caucasian.

Not really? Paling noticeably is something that happens. Getting green coloured skin? Not so much. It's not the same kind of figure of speech.

Paling is indeed a thing that happens but it doesn't exclusively happen to white people.

Nope, not exactly. Someone who is scared shitless can go into shock, because all the blood is suddenly not flowing correctly anymore. So, white-faced can be totally meant literally, blood leaving that area, no proper circulation - face looks pale.

Face looks paler than usual, yes. I get that. Because the blood leaves. I'm just saying the phrase by no means applies only to white people. So it's a poor piece of proof that Hermione is specified as a white person race-wise.

I'm mixed race but on the paler side and I know my face can noticeably pale from its usual colour. Someone could easily describe that as "white faced" and be right, but I still wouldn't be caucasian.
