But when will we get media with some racially accurate cowboys in general - aka mainly black and mexican cowboys.

I have an original short story (original in the sense that it's not fanfic, not that it's never been done before) about a black (ex-slave) trail boss, but I'm afraid I'll be appropriating, because I'm a Whitey McWhiterson. So it's still sitting on my hard drive, waiting for me to decide if it's even worth revising.

Is he written like a stereotypical black person from a 1920s-30s movie? Because that is offensive.

Is he written like a real complex person who isn't an offensive stereotype? Because that would be an interesting story. I would like to read it. Just because you are white doesn't mean you can't have black, asain, hispanic or native people characters. It's fiction. By that whole appropriation thinking then women couldn't write male characters and the other way around.

Please put this up somewhere and share a link. I want to read it.

You scoff, but a rather prominent author was warned off writing a black character by his editor due to concerns of appropriation. I wish I were kidding: https://www.google.com/amp/www.bbc.co.uk/news/amp/39988992

Yes but in the past he has said things like Idris Elba is too 'street' to play Bond, so I wouldn't trust what he says on this issue.
