The ending is perfect for the kind of movie Signs is, but Signs is kind of a lunatic over-the-top unrealistic movie and Hollywood and critics tend not to appreciate that kind of movie

Nah, the structure of the ending is great, neatly tying together all the separate components and all, but the allergic to water thing is fucking awful. It pokes a million plotholes into everything else in the movie.

Aliens that can be harmed by a glass of water are somehow okay roaming through a misty, dew-soaked cornfield? What happens when it fucking rains? etc. etc. etc.

Up to that point things are over-the-top, but everything is firmly grounded in the real world. The aliens are scary because of this. But the twist just throws it all into question.

I know it's like "this alt theory will blow your mind!" clickbait meta pretentiousness, but I saw a pretty funny explanation by someone theorizing the aliens were on a hazing challenge - very fratboy logic really "you gotta go to this 70% of dangerous-to-us-water planet without a protective suit and interact with local fauna, go!".
