I think they must have given her a much lighter sword for the sparring scene :/. During the actual battle she looks like she's never used one.

Agreed. I'm not saying she has to be Aragorn levels of sword competency (though that would've been nice!) but for that final confrontation with the Witch King, she looks like she's wielding a fireplace poker instead of a sword.
