Any of Blind Guardian's albums. I'm particularly fond of Nightfall in Middle Earth, but all their songs are great. Also The Alliance of Kings by Ancient Bards. Any of Blackmore's Night albums. I don't think there is a single song of theirs I don't like.

Blind Guardian are epic! I got to see them live a lot of years ago in Barcelona, they are amazing and seem to be really humble and sweet guys too.

Coheed and Cambria has some killer awesome concept albums, complete with characters and a sci-fi setting. There's even comic books based on them, written by the lead singer. I recommend starting with the album Good Apollo, I'm Burning Star IV:

Since it recently celebrated its 50th birthday: Sgt. Pepper. I saw a thing on PBS a little while ago about some of the music on the album and it was really fascinating.

A Night at the Opera (Queen). I also saw a thing on TV about this not long ago and it made me realize how good an album it is, and I was very impressed with the amount of work and wacky experimentation went into so many of the songs - not just Bohemian Rhapsody.
