Because, in some fandoms, many people write characters differently depended on who tops or bottoms (or switch, though I've always found that when they switch, there's still a preference and characterization is influenced by that) and each fan defend their choice as the "IC one."

Yeah, this. In classic yaoi, it's not really just about the sex, it's about the personalities. Writing a character as a top is more likely to bring out their stronger or more aggressive qualities, and writing a character as a bottom is more likely to make them vulnerable and emotional. Honestly, I don't think the characters even have to actually have sex in these sorts of fandoms, that's almost secondary. It tends to be a fight of how you interpret the characters themselves.

That sounds like a really annoyingly constraining and limiting way to write men in relationships. But then I've never been into yaoi specifically...

It can be. It can also be a fun exploration of different existing character traits. Certainly they don't have to act a certain way, but in yaoi, it can be interesting to look at one character being more dominant, even if just momentarily. *shrug* It doesn't have to necessarily mean it's out-of-character.

This is why even though in theory I would love bottom!Sam, in practice I hardly ever read it. The Sam Winchester in those fics is a fragile, weepy, passive parody of a romance novel heroine.

This is true. I noticed that a lot when I was super into the Sherlock Holmes films fandom. And I admit, I had a preference for top!Holmes that was hard to find because they all preferred bottom!Holmes and I hated seeing be turned into this...woobie baby.

At least when I DID find top!Holmes, they didn't write Watson as a woobie. I felt like those writers had respect for both characters as opposed to one (i.e. Watson).
