Not the OP but I've enjoyed a lot of Hannibal fic without ever seeing the show because there's a lot of gore and body horror and it's mostly well-written too.

I ruined Hellsing for my friend because she read my fanfic which was 90% love stories for a crack pairing and when she found out canon was blood and guns and bodies piled up like cordwood she couldn't get into it. Not sure how she felt about the characterization specifically, but it's probably a sign I had them OOC. I regret nothing however.
