the best grilled cheese sandwich:

frozen, whole-grain bread (Brownberry Oven, if you have it. Something somewhat dense and grainy and nutty)
Butter one side of a slice of frozen bread, then put it butter-side down in a heavy skillet in which you've melted a pat of butter.

2 slices of whatever cheese you like.

When the cheese starts to melt, butter the 2nd slice, put it butterside up on top of the cheese, then flip and fry til the 2nd side start to brown.

how does using frozen bread change it?

It seems to let the bread get crispier on the outside without drying out? And having the cheese on the frozen bread seems to slow down the melting of the cheese a little, so that it's less likely to melt off the bread and intot he pan.

(Also, if you don't eat bread that often, keeping in the freezer and then thawing/toasting as you need it keeps it from going bad.)
