That's cool, I was going to say something similar. I really like to write deep POV, and in that front the advice that has helped me the most was always... try to put yourself in the character's shoes, I guess? An engineer and a poet, from example, won't notice the same things when they go into a place they don't know. They also won't make the same mental comparisons, won't use the same vocabulary, or (probably) structure their thoughts the same way.

Very closely connected to that is a wonderful post about character voice that I found on Tumblr, which picked apart exactly how a character's personality influences the way they talk by using Harry, Hermione and Ron as examples and how they would react to particular hypothetical situations. I had never thought about how differently they talk until they pointed it out, because it seemed to work so naturally in the books, but I definitely pay attention to that in my own writing now!
