I can’t stand it on GBBO when they slice into things on these stone plates and I hear the knife scraping against the stone. SO BAD FOR THE KNIFE! I hope everyone present dies a little inside whenever they have to do this and I wonder why no one ever said anything to whatever producer came up with the idea. Maybe they use cheap knives for this part?

I feel you, OP. Coke has an ad where a sandwich is cut with a knife on a plate and...ugh. I'm more concerned about the damage to the plate, but I totally understand.

Is it actually the knife making that sound, though, or is it a Foley effect added afterwards because it's what a lot of audiences expect?

The sound it's the issue, it's the fact that they are using a slab of rock as a cutting board. That's not good for knives.

Are those proper chef knives, though? If they're just regular butter knives it's irritating, but doesn't really matter.

They can't be butter knives because they have to cut through bread and pastry and things. They are sharp knives, although not necesarily high quality ones.

I didn't realise GBBO did this - the Irish bake-off put everything on slates and it was absolutely horrible.

This would annoy the shit out of me too if I saw it. I've seen people use glass cutting boards too which is just... ugh. You really can't improve on a wooden cutting board.
