In all honesty I have never read a coffee shop AU because I cannot figure out how it could be interesting. I mean I could in theory look at a character and wonder what they were like in high school or what they would be like as a vampire, but I have really never looked at one and wondered what they would be like as a barista.

I read one (or maybe a couple?) in the Suits fandom and it worked really well. But that's because it didn't really change anything. The characters were still the same people with the same skill sets, doing approximately the same things with their lives.
