Not a total defense since honestly I don't have any experience with anyone blind, but Matt can 'see' in a sense, so to me it's not really out of 'character' that he's looking in Luke' direction even if he's not seeing him in the traditional sense?

I can buy him facing his head in Luke's direction to be polite/respectful, but he doesn't use his eyes to 'see'. It doesn't really make any sense for him to react to visual stimuli by moving his eyeballs like that. Unless it ever gets explicitly addressed I'm gonna pass it off as shit acting on Cox's part.
