Why not just hand wash it at that point though

You could! But I spent more care when handwashing my dishes than a quick rinse. I do, however, hate putting dishes in that are still covered in gunk, or have stuff caked on them. It won't get clean in the dishwasher, and depending on the gunk, is actually bad for the dishwasher.
