Because the techniques, attitudes, and assumptions that constitute the "male gaze" grew out of male filmmakers doing things for male audiences.

And second, because the reality of this is that it all exists in our society and in our film industry, and the reality is that society and the film industry are sexist and structurally unequal in various ways.

I don't think there's anything problematic in talking about the male gaze.
