You don't have to follow instructions exactly, but you have to know what directions are flexible and which directions aren't.

What anon said. I generally always mix up the order of things or use a hand mixer when it says not to, etc. Or randomly throw in extra ingredients I think will make things taste better.

Mostly - be careful of yeast, it's easy to mess up if you're not paying attention, and use the recommended temp setting. Otherwise - have fun!
