I dunno. I never watched this, but I always felt really uncomfortable when the engineer in Fullmetal Alchemist threw wrenches at the main guy and made him bleed. Something that's cartoony can still feel messed up.

You do you, but know that it is entirely unintended by the material and that reaction isn't something to be expected of the majority of readers. As long as you don't tell people off for, excuse me, "romanticizing domestic abuse" when they can't take seriously a situation where a guy ends up in a full-body cast and then breaks out of it himself and is totally fine one panel later.

I'm fine with most anime slapstick, but Winry's was a special case because the violent parts of it went further than normal for that kind of gag. As mentioned above, there was bleeding, which is a bit unusual, sometimes the image of the mangled victim would be blurred (also for comedic effect, I know, but it still felt excessive) and the other characters around them would react to it like real life people would, going "Are you okay?!" and looking really concerned, whereas typically part of the humor in slapstick injuries is that other characters ignore it or act like it's perfectly normal. I know nothing that dark was intended, but I think Arakawa is really bad at that kind of humor.

But the slapstick injuries don't stick? That stands out to me in a series like FMA where you actually have many example of serious, violent injuries with somewhat realistic consequences for the characters (compared to other shounen). FMA doesn't abuse "magic healing", so you'd have someone getting hurt in a fight and being in the hospital for the rest of the chapter, or disappearing from the story for ages because they have to get fitted with prosthetics. If a character ends up hurt in a slapsticky way, no matter how OTT it is they're fine exactly one panel later, what's the impact here?

Fullmetal Alchemist had a lot more serious moments than Ranma 1/2 ever did. But I still see your point. There was this Katamari Damacy game for the PSP where the king would smack his son around for failing to complete the level and I ended up giving it away because I hated that so much. And that really is just silly gags.
