I've heard it could be because when you're doing it yourself, you're exposed to all the smells during the prepwork and you get 'burnt out' on it before you ever taste it.

Speaking as someone who cooks, recipes are sometimes just a guideline when you're an experienced cook. *I* remember that oh yeah, instead of this I do that, or I add a bit more thyme than the recipe says, or whatever. Or I adjust depending on my mood or what ingredients I have. But then again it might just be that you can't replicate the nostalgia and good associations you have with food that your mom made you and that's pretty common, too.
