Fantasy where magic is bizarre and unpredictable seems to be a lot more common in YA than adult fiction. It does exist, e.g. Peter S. Beagle and Patricia A. McKillip, but it's harder to find.

I do wonder how much of this is fandom / marketplace considerations.

I mean, it really seems to me that epic fantasy with detailed worldbuilding and systematized magic has been by far the most popular with fantasy fans over the last 25 years or so, to the extent that it's crowded out alternatives in terms of word of mouth and popularity, and perhaps in publishing as well. Maybe slightly less so over the last 5 or 10 years but still. I think a lot of it is the readership.

Yeah, YA Fantasy does a better job generally at being enchanting and magical than adult fantasy. Adult fantasy stuff tends to focus a lot more on character dramas, politics, whatever other non-magic stuff. In a lot of adult fantasy, the "fantasy" itself seems like more of a backdrop than the theme.
