I just don't get the appeal, especially when the characters are in a more fantastical setting, how is them working in a coffee shop more enticing than literal magic or superpowers?

But w/e man I just avoid them.

It's a very domestic (or, at least, it has a domestic aesthetic) setting that also allows you to have people who aren't related to each other or married, and give them external obstacles to deal with and stuff, and that's also familiar and accessible to young people.

Also gives the characters a chance to see each other regularly when the canon might not allow that. I’m not a fan of the trope but I can see the appeal.

I'm just personally not into mundane settings so removing the thing that I like, the magic/superpowers, takes away the appeal of the characters for me.

Other people can like it, but I can remain baffled at the sheer number of those kinds of AU's.
