I think Coffee Shop AUs allow people whose lives feel mundane and underwhelming to imagine their favorite characters in a similar situation. But at the same time, Coffee Shop AUs are less depressing and easier to romanticize than say, Fast Food AUs or Retail AUs. So they're like the best of both worlds for some people. Barista/o isn't an ambitious occupation, but it feels less like a dead-end job than most dead-end jobs. Plus, setting-wise, the lighting is better, the ambiance is better, and the smell is much, much better than the halogen and floor cleaner of a Best Buy, or the halogen and grease of a Burger King.

Not to mention, people who go to coffee shops a lot do actually get to know their baristas a little. I mean, I go to coffee shops a lot, and I've had a barista/o come over and have coffee with me after their shift a couple of times over the years. I've also had baristos give me their numbers a couple of times over the years. Whereas it's hard to imagine getting to even that minor level of familiarity with a fast food worker or a sales clerk.

Personally, I love AUs and even I don't love Coffee Shop AUs. I don't hate them, but I'm more likely to find them boring than most other types of AUs. However, I still think Coffee Shop AUs have various points of appeal for plenty of people, and I don't find it hard to imagine what people enjoy about them.
