Re: Things you straight up don’t get
I had to work my way up to it, like strong coffee. Started out with brie and camembert, which a good brie is kinda like a tangy butter. Mild all around. Next was Tallegio, which has The Smell, but not The Taste. It tastes super mild compared to its smell, and its pretty similar to brie - tangy, but stronger. Goes well with strong breads, with a bit of speck.
Cambazola is a super mild blue cheese, which smells less like feet than Tallegio, but has more of the smelly cheese taste without it being like, "dear god, why am I eating mold, where did my life go wrong", because it's incredibly creamy. Good with super fruity breads, like a cranberry loaf.
At this point I realized I kinda liked the taste of milky, moldy feet and out came the roquefort.
...it's acquired, but it's also a great way to clear a room. A lot of people have a fantastic flinch reflex when presented with a plate covered in moldy things.
