Well, I would first check his obituary, since it may say something like 'in lieu of flowers, donate to...' like a favorite charity or something.
If there's nothing there, then see if there's already a planned wake or something. It may be she woudln't want anything like that, and if not, perhaps you could collect for a donation in his name of a charity you know he supported, or you could have people who knew and liked him write little notes and make them into a booklet for her with pictures and memories and things about him....
