I don't like the trope, either but not because I don't believe in soul mates. I think it's used a crutch for lazy writing. Why are they together? It's not because they have life goals that mesh, they make each other laugh, they have similar values, they support each other when they fail, they can stand each other's annoying habits, you know all that stuff that matters in real life, no. It's because destiny says so.

And in fics like OP said, mostly they just flounce and bitch and have stupid as fuck misunderstandings until they turn and look at each other and say "I guess destiny was right, after all. You are my one true love forever and forever."
