X-Files or Person of Interest would be my top choices probably.

I would probably check in semi-regularly on a bunch more shows - definitely any of the Star Trek shows, for instance. Maybe Justified or Mr Robot. I dunno.

What pace are you thinking for this? 2 episodes a week or what?

Probably any non-adult cartoon. Something Star Wars, Star Vs., Miraculous Ladybug.

American Gods could probably make for good discussion too.

True; Honestly I don't watch it myself, but I do remember a handful of episodes being OnDemand for at least DirectTV.
