If you are just interested in Loki, all the Thor movies and the first Avengers.

If you are interested in the whole fandom: Iron Man, Thor, Captain America: The First Avengers, Avengers, Iron Man 3, Captain America: The Winter Soldier, Avenger: Age of Ultron, Captain America: Civil War.

The first three set up most of the characters for Avengers. You can watch Thor: The Dark World but nothing that happens in it really matters to the rest of the world. Same with Iron Man 2. Guardians of the Galaxy, Ant-Man, and Doctor Strange are not really all that connected.

I wouldn't necessarily say nothing happens in IM2 that matters to the rest of the Marvel movie 'verse. Afterall, we're introduced to Black Widow in IM2.

I hadn't seen IM2 when I saw Avengers, and it was fine, since she introduced herself to Bruce in it. Speaking of Bruce, Avengers might as well be his first film too despite Incredible Hulk, but I wouldn't advocate watching that.
