I have the weekend off. I plan to cook a lot, and to clean because the cooking will make a mess. I enjoy cooking so it's not as bad as it sounds. I'm making mostly bean dishes that I'm going to freeze in individual servings. Fortunately I like beans.

Navy bean soup, pinto beans in mole sauce, and black beans with some onion and red bell pepper.

Do you make the mole from scratch? What kind?

I use this recipe: http://www.jemangelaville.com/2010/04/05/easy-mole-sauce-and-things-to-do-with-it/

However what they mean by "easy" is "easy if you are Gordon fucking Ramsay" so I have simplified it even further and also I left out a couple of the spices because I don't keep them around. And I use vegetable broth instead of the chicken broth. This recipe is probably better with meat than beans but I like it anyway.
