Evidently, this is a MYTH that Red Velvet is just chocolate cake with food coloring. Real red velvet cake gets it color naturally through the... type of cooking/ingredients used (can't remember) and legitimately does have a different flavor.

Box cake mix for red velvet cake is full of food coloring. You lose, son.

Red Velvet Cake is supposed to get it's red coloring from a reaction between the natural cocoa powder and the acid in the vinegar (or buttermilk). There is a reaction and it is kind of red, but it isn't red enough for a lot of people, so they add a lot of red food coloring. Red Velvet tends to have less cocoa than most chocolate cakes and has a bit of a tang to it. Honestly, it's a bit like a milk chocolate buttermilk cake that has been dyed red and I'm okay with that. But you can use beets to give it its red coloring if you prefer.

The color comes from cocoa powder that has not been Dutch processed - as the other anon said, a chemical reaction brings out a reddish color from the cocoa. Since any random cocoa you pull off the store shelf might be Dutch processed or a mix of natural and Dutch processed, the cake won't turn reddish if you aren't using the right kind of cocoa and you would have to color it. This and the desire to make red velvet even MORE RED probably led to people thinking food coloring was always part of it.
