I never intended to make it sound like the WHOLE POINT of the show was the shipping but rather than TS!Simon's ENTIRE character was defined by his relationship Nia and he wouldn't be TS!Simon if he is coupled with anyone but here. There is one very good fanfiction about this...

You're free ship Simon with anyone that's not Nia or Kamina, just don't think it is an IC relationship. Sure, you can change Simon's background completely, though... but what makes a person a person are their memories, so it wouldn't be exactly Simon. :/
