I just wanna say this: I think he was embarrassed by the whole thing. Here he is, a teenage boy who's been pretty much deprived of a mother his whole life, and now he finds it in a girl who's the same age as him (awkward~).
Chapter 86 explains it pretty well (after which, coincidentally, Yuki completely stops showing signs of interest in Tohru).
Though I still can't help but feel that in the beginning Yuki was supposed to be attracted to Tohru, but Natsuki Takaya decided to change it last-minute into a mother-son kind of relationship. ;;;
