Basic cooking skills. So, how to know when meat is done, how to chop things safely, how to fry/cook things. Honestly, most safety kitchen stuff can be learned during one meal.

Yep.

I'm wholly enjoying Binging with Babish on youtube and his kitchen basics and attempts to recreate food in media.

Agreed. I'm appalled when people manage to reach adulthood without even learning how to scramble an egg.

Oh god, same. It's such a basic thing that it boggles me that there are people past their teens who can't even manage that.

In this day and age, I'm not sure there's any excuse for not knowing how to cook a simple meal. You can do it with crappy, cheap pans and equipment - it's not fun, but it's not impossible. If you have internet access, you also have access to any number of youtube videos, recipes, tutorials, whatever. There are cooking shows on TV.
